
Ratatouille
Ratatouille is an iconic dish from Provençal cuisine, highlighting seasonal vegetables. This colorful and flavorful stew is perfect as a side for meat or fish dishes, or simply enjoyed on its own, hot or cold.

Preparation
- Wash and dice the vegetables.
- Heat the olive oil in a large pan.
- Add the sliced onion and chopped garlic, cook until translucent.
- Add the bell peppers, then the eggplants and zucchinis. Sauté for 10 minutes.
- Add the tomatoes, thyme, bay leaf, salt, and pepper.
- Cover and simmer on low heat for 30 to 40 minutes, stirring occasionally.
- Serve hot or cold.
