Ratatouille

Preparation

  1. Wash and dice the vegetables.
  2. Heat the olive oil in a large pan.
  3. Add the sliced onion and chopped garlic, cook until translucent.
  4. Add the bell peppers, then the eggplants and zucchinis. Sauté for 10 minutes.
  5. Add the tomatoes, thyme, bay leaf, salt, and pepper.
  6. Cover and simmer on low heat for 30 to 40 minutes, stirring occasionally.
  7. Serve hot or cold.
